Ingredients

Cakes
  • 200 g milk chocolate Chopped, or use milk chocolate morsels.
  • 80 g plain cornflakes Fresh and crisp; not frosted.

Equipment

  • Microwave-safe mixing bowl
  • Kitchen scale
  • Spatula
  • 12-cup muffin pan and paper cases

Instructions

Melt and mix
  1. Line a 12-cup muffin pan with paper cases. Measure the cornflakes into a large dry bowl. Put the chocolate in a separate dry microwave-safe bowl.
  2. Microwave the chocolate for 30 seconds, then stir thoroughly. Continue in 10–15-second bursts, stirring each time, until just smooth. Stop heating when small remaining pieces melt as you stir. The bowl may be hot; adults should handle this step.
  3. Pour the melted chocolate over the cornflakes. Fold gently with a spatula, lifting from the bottom until the flakes are evenly coated without crushing them.
Portion and set
  1. Divide the mixture among the 12 cases in small mounds, using two spoons. Nudge loose flakes together lightly without packing the cakes tightly.
  2. Refrigerate for about 1 hour, or until the chocolate is firm and each cake lifts from its paper. Chilling time varies with the chocolate and refrigerator.
  3. Store in an airtight container in the refrigerator and enjoy within 3 days for best texture. Let a chilled portion stand briefly before eating if the chocolate is very firm.

Notes

Nutrition is an estimate per one of 12 small cakes, using 200 g Nestlé Toll House milk chocolate morsels (70 kcal per 14 g) and 80 g Kellogg’s Corn Flakes (150 kcal per 42 g), divided by 12. Label rounding and brands affect the figures. Protein is not calculated precisely because the chocolate label reports less than 1 g per serving.
Planning cost basis for quantities used: chocolate about USD $2.50–4 and cereal $0.50–1. The total is an ingredient allowance, not a current store quote; paper cases are excluded.
Video companion: Kelly’s Cakes and Bakes demonstrates the same two-ingredient chocolate-and-cornflake method. Follow the written portion size and chilling cues here.
Contains milk; chocolate may contain soy and cornflakes may contain barley malt. Check labels for your dietary needs. Keep all utensils dry when melting chocolate.
