Ingredients

Frozen centers
  • 250 g fresh strawberries Washed, dried very well, hulled and chopped into small pieces.
  • 250 g plain whole-milk Greek yogurt Use thick yogurt.
  • 20 g pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 10 g dark chocolate 70–85% cacao, finely chopped.
Coating
  • 200 g dark chocolate 70–85% cacao, chopped.
  • 10 g coconut oil

Equipment

  • Freezer-safe baking sheet
  • Parchment paper
  • Mixing bowl and spoon
  • Microwave-safe bowl
  • Forks for dipping
  • Freezer-safe container

Instructions

Mix and freeze
  1. Line a freezer-safe tray with parchment and clear space in the freezer. Wash the strawberries, dry them thoroughly, remove the hulls and chop into small pieces, about 1/4 inch (6 mm).
  2. Stir the yogurt, maple syrup and vanilla together. Fold in strawberries and the 10 g finely chopped chocolate. Scoop into 12 equal mounds on the tray, leaving space between them.
  3. Freeze for at least 2 hours, or until the mounds are solid all the way through. Larger or thicker mounds may need longer; do not dip centers that still slump when lifted.
Coat and store
  1. Put the 200 g coating chocolate and coconut oil in a microwave-safe bowl. Heat in 20-second bursts, stirring after each, until almost melted; stir until smooth. Let cool until warm and fluid, not hot.
  2. Remove only a few frozen centers at a time. Lower each into the chocolate with a fork, spoon chocolate over it, lift and let excess drain. Return to the parchment. Work quickly and keep undipped centers frozen.
  3. Freeze coated clusters for 20 minutes, until the shells are set. Transfer to a freezer-safe container with parchment between layers. Keep frozen; for best texture, enjoy within about 1 month.
  4. Let the portion you plan to eat soften for about 5 minutes before serving. Do not leave the full batch at room temperature to thaw, and do not treat freezing as a way to make poorly handled dairy safe.

Notes

Calorie estimate per one of twelve clusters uses USDA values for whole-milk Greek yogurt, raw strawberries, maple syrup, dark chocolate (70–85% cacao), coconut oil and vanilla. It includes all 210 g chocolate; leftover coating can reduce the amount actually eaten. Brands and portion size change the estimate.
Planning cost basis: strawberries about $2–3, yogurt $1–2, chocolate $3–4 and syrup/oil/vanilla about $1. This is an estimate for quantities used, not full packages or a current shop quotation.
Contains milk. Check chocolate and yogurt labels for allergens. Keep frozen; refrigerator storage softens the centers.
Video companion: MsVegan demonstrates frozen strawberry-yogurt clusters with a chocolate coating, using nondairy vanilla yogurt. This written recipe uses plain dairy Greek yogurt and includes a small amount of chopped chocolate inside.
