Ingredients

Dessert dough
  • 1 15.5-ounce can cooked chickpeas Drained, rinsed and dried well; use 240 g drained chickpeas.
  • 1/4 cup smooth peanut butter 64 g; stir well if separated.
  • 3 tablespoons pure maple syrup 60 g
  • 1 teaspoon vanilla extract 5 g
  • 1 gram fine salt A small measured pinch.
  • 1/3 cup semisweet chocolate chips 60 g
  • 1–2 tablespoons water Only if needed, added a teaspoon at a time.

Equipment

  • Food processor A small or medium bowl works well for this quantity.
  • Fine-mesh strainer For rinsing chickpeas.
  • Flexible spatula
  • Covered container For chilling and storage.

Instructions

Blend, fold and chill
  1. Drain and rinse the canned chickpeas under running water. Shake off excess water and pat dry with a clean towel. Measure 240 g. Remove any loose skins if desired; do not substitute uncooked or merely soaked chickpeas.
  2. Put the chickpeas, peanut butter, maple syrup, vanilla and salt in the food processor. Process for 1–2 minutes, stopping to scrape the bowl, until very smooth. If the mixture is too stiff to blend, add water a teaspoon at a time, using only what is needed.
  3. Transfer the mixture to a bowl. If the processor has warmed it, let it cool briefly before folding in the chocolate chips so they remain distinct.
  4. Cover and refrigerate for 20 minutes, then divide into six dessert portions. Serve with a spoon; optional fruit or other dippers are not included in the recipe quantities.
  5. Refrigerate leftovers promptly at 40°F or below and use within 3–4 days. Discard after more than 2 hours at room temperature, or 1 hour above 90°F. This is an edible dessert dip, not dough formulated for baking.
