Ingredients
Pancake batter
- 300 g soft silken tofu about 10 1/2 oz, loose packing liquid drained; do not press
- 1 1/2 cups all-purpose flour 180 g, spooned and leveled
- 1/2 cup 2% milk 120 ml
- 2 tablespoons granulated sugar 25 g
- 2 tablespoons canola oil 30 ml/27 g, plus a little for the pan
- 2 teaspoons baking powder 8 g
- 1 teaspoon vanilla extract 4 ml
- 1/4 teaspoon fine salt 1.5 g
- 1 cup blueberries 150 g, washed and dried, or frozen without thawing
Equipment
- Blender
- Mixing bowl and whisk
- Nonstick skillet or griddle
- Spatula
Instructions
Mix and cook
- Blend the silken tofu, milk, sugar, canola oil and vanilla until completely smooth. In a bowl, whisk the flour, baking powder and salt.
- Fold the blended mixture into the dry ingredients just until no dry flour remains. Fold in the blueberries gently. Rest for 5 minutes; the batter should be thick but scoopable, not a firm dough.
- Heat a nonstick skillet or griddle over medium-low to medium heat and lightly grease it. Scoop roughly 1/4 cup batter per pancake and gently spread into rounds about 3 1/2 inches wide. Leave space for turning.
- Cook for about 3–4 minutes, until the edges begin to set, the top loses some wet shine and the underside is golden. Turn once and cook for another 2–3 minutes, adjusting the heat lower if the surface darkens before the middle cooks. Frozen berries may extend the time.
- Check one pancake by cutting into the center: it should be set, with no wet batter. Continue cooking gently if needed. Repeat with the remaining batter, lightly greasing as needed, to make about twelve small pancakes. Serve in four portions with optional toppings.

Notes
Nutrition is estimated per quarter of the batch, about three small pancakes, using USDA ingredient data for soft silken tofu and 2% milk. Toppings and extra pan grease are excluded. Brands and pancake size change the estimate. Do not taste raw batter. Refrigerate leftovers promptly, use within 3–4 days and reheat to 165°F (74°C). The batter contains soy, wheat and milk.
