Ingredients

Oatmeal
  • 2 cups old-fashioned rolled oats 160 g
  • 2 cups 2% milk 480 ml
  • 2 large eggs
  • 2 medium apples cored and diced into 1/4-inch pieces, about 300 g prepared
  • 1/4 cup pure maple syrup 80 g
  • 2 tablespoons unsalted butter 28 g, melted, plus a little for the dish
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1 teaspoon vanilla extract

Equipment

  • 8-inch square baking dish about 20 cm
  • Mixing bowls
  • Whisk

Instructions

Bake the oatmeal
  1. Heat the oven to 350°F (175°C). Lightly grease an 8-inch square baking dish.
  2. Combine the oats, cinnamon, baking powder and salt in a bowl. In a second bowl, whisk the milk, eggs, maple syrup, melted butter and vanilla.
  3. Stir the wet mixture into the oats, then fold in the diced apples. Pour into the dish and spread the apples evenly.
  4. Bake for 35–45 minutes, until the center is set rather than liquid and the edges are lightly golden. Because the mixture contains eggs, check that the center reaches 165°F (74°C).
  5. Rest for 10 minutes before cutting into six portions. Serve warm, with milk or yogurt if desired.

Notes

Use rolled oats, not steel-cut oats. Nutrition is an estimate per one-sixth of the pan, calculated from USDA FoodData Central ingredient data; optional toppings and the small amount of pan grease are excluded. Refrigerate portions promptly in shallow containers, use within 3–4 days and reheat to 165°F (74°C).
Technique video: The Real Food Dietitians. Their version adds walnuts, chia and applesauce; this version omits those ingredients and uses its own quantities and baking cues.
